SMOKED SALMON DIP Our SMOKED SALMON DIP is a very simple and quick to prepare recipe as a hors d'oeuvre, side dish or something while watching the game:

1 - 4oz package of Kodiak Island Specialty Seafoods Wild Smoked Salmon
(your preferred flavor!)
8oz package of Philadelphia cream cheese
Place ingredients in a food processor and blend until smooth.
Serve with crackers.
 
  Kodiak Island Smoked Salmon Chowder   Kodiak Island Smoked Salmon Chowder
Dice:
1 - Cup onion, 1 - Cup green pepper, 1 - Cup carrots, 1 - Cup celery
Sauté in butter until the onions are transparent.
Add 1 - teaspoon: Parsley, Thyme, and Dill Weed
Add 1 - 4oz package of Kodiak Island Specialty Seafoods Wild Smoked Salmon
(your preferred flavor!)
Add 4 - cans of low-fat chicken broth and simmer for 15 minutes.
Add 1 - cup of diced zucchini
1 - Can of creamed corn
1 - Can of Fat-Free condensed milk
Simmer for an additional 5 minutes and serve with bread and white wine.
Serves 4 to 6
 
  Kodiak Island Smoked Salmon Ravioli  

Kodiak Island Smoked Salmon Ravioli
In a food processor add:
1 cup ricotta cheese
1 packet of your favorite flavored smoked salmon
1/2 cup of Parmesan cheese
¼ teaspoon garlic powder


Blend until smooth Place a dollop of the mixture in the center of a wonton wrapper, moistening the edges with water, and fold on the diagonal.
Seal the ends using the tip of a fork.

Add to boiling water for about 2 minutes.
Remove and top with your favorite red or white sauce. Sprinkle with more Parmesan and top with chopped parsley.
Serves 4

       
  Alaskan Salmon patties   Our favorite, delicious Alaskan Salmon patties
1 - 4oz package of Kodiak Island Specialty Seafoods Wild Smoked Salmon (your preferred flavor!)
1 cup of bread crumbs
2 beaten eggs
1 tablespoon finely diced onion
Mix and form into patties
Sauté in butter until brown
Mix 1 can of cream of mushroom soup and ¼ cup of cream, heat, and pour over the patties.
You’ll like these salmon patties so much you’ll invite us over. We’ll be there!
       
  Kodiak Island Broiled “Fresh Smoked” Salmon with Cucumber Dill Sauce  

Kodiak Island Broiled “Fresh Smoked” Salmon with Cucumber Dill Sauce
Defrost 1 package of our Fresh Smoked King, Sockeye or Coho Wild Alaskan Salmon
(Note that all of our Fresh Smoked Salmon products require cooking before consumption!)


Place fillet on a broiler pan and coat with melted butter
Broil for 4 minutes or longer until the fish begins to flake
Serve alone, or with your favorite sauce. We recommend the following sauce recipe!


Cucumber/Dill Sauce
In a food processor place:
1 cup of sour cream
1/2 teaspoon of fresh or your favorite brand, horseradish
1 cucumber peeled, with the seeds removed
1 tablespoon chopped dill
Blend until smooth
Serve as a dipping sauce or dollop directly on the salmon

       
  Kodiak Island Baked  

Kodiak Island Baked “Fresh Smoked” Salmon with Mushrooms
Our "Fresh Smoked" King, Sockeye or Coho Wild Alaskan Salmon cut to 6 oz. portions
(Note that all of our Fresh Smoked Salmon products require cooking before consumption!)

Combine in a bowl:

4 tablespoons of butter

1/8 teaspoon of thyme

Salt and pepper to taste

2 tablespoons of dry white wine

1 can of sliced mushrooms

3 tablespoons of minced onions

Place the salmon in aluminum foil and pour the mixture over the salmon.  Seal the foil around the salmon and bake for approximately 15 minutes at 350° or until the salmon flakes.  Serve and enjoy the rich flavor of lightly smoked grilled salmon year around!

       
  Kodiak Island Baked  

Kodiak Island Broiled “Fresh Smoked” Salmon with Spinach Sauce
Our "Fresh Smoked" King, Sockeye or Coho Wild Alaskan Salmon cut to 6 oz. portions
(Note that all of our Fresh Smoked Salmon products require cooking before consumption!)

Place the salmon on a broiler pan, topping the salmon with butter and pepper to taste.

Broil salmon for approximately 4 minutes or until salmon flakes.

In a bowl, combine:

1 cup whipping cream

2 tablespoons of buttermilk ... and let stand.

Combine:

2 tablespoons of minced onions & 2 tablespoons of butter in a small sauce pan and sauté for about 2 minutes. Add the juice of 1/2 lemon and cream mixture & bring to a boil.

Add 6 spinach leaves with the stems removed, cut in small strips, and simmer for another minute. - Spoon the sauce over the salmon and enjoy!
